Plum Good Peach Cobbler

With fall coming upon us this is a great time of year to make some cobbler to end your day. If you are feeling adventurous try adding different types of fruit each time you make this delicious recipe.

Peach and Plum Cobbler

A delicious twist on plan peach cobbler. I added plums into this recipe to give a few extra vitamins.

Ingredients
  

  • 3 peaches peeled, cored and sliced (about 3 cups)
  • 2 plums peeled, cored and sliced (about 1 cup)
  • 3/4 cup granulated sugar
  • 1/4 tsp salt

For the batter

  • 6 tbsp butter
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 tsps baking powder
  • 1/4 tsp salt
  • 3/4 cup milk
  • ground cinnamon

Instructions
 

  • 1. Add the sliced peaches, plums, sugar and salt to a saucepan and stir to combine.
  • 2. Cook on medium heat for just a few minutes, until the sugar is dissolved and helps to bring out juices from the peaches. Remove from heat and set aside.
  • 3. Preheat oven to 350 degrees F. Slice butter into pieces and add to a 9×13 inch baking dish. Place the pan in the oven while it preheats, to allow the butter to melt. Once melted, remove the pan from the oven.
  • 4. In a large bowl mix together the flour, sugar, baking powder, and salt. Stir in the milk, just until combined. Pour the mixture into the pan, over the melted butter and smooth it into an even layer.
  • 5. Spoon the peaches, plums and juice (or canned peaches, if using) over the batter. Sprinkle cinnamon over the top. The recipe says generously, but I prefer lightly.
  • 6. Bake at 350 degrees for about 38-40 minutes. Serve warm, with a scoop of ice cream, if desired.

Notes

When I made this recipe, I did everything from scratch. I blanched my peaches and plums to get the skin off. The peaches worked fine for blanching, but the plums did not. I might just try and use a peeler the next time for the plums. This was a very simple recipe and both my husband and I enjoyed the outcome.
